What do we need for making yogurt cake ?

All you need is sweet thick greek yogurt or vanilla flavoured yogurt, eggs, low gluten flour, corn starch, and sugar. Lemon juice plays a crucial role in eliminating the taste of raw egg. The sweetness of this cake is quite mild due to its low sugar content. However, it can be easily customized to cater to individual preferences. To enhance the sweetness, you can drizzle some honey or your preferred sweetener on top of the cake. Alternatively, you can also incorporate sugar into the cake batter.

Ingredients

  • 220g sweet greek yogurt
  • 3 eggs
  • 1 teaspoon of lemon juice
  • 75g low gluten flour
  • 15g corn starch
  • 35g sugar

Combine 3 egg yolks, 220g of sweet Greek yogurt (or vanilla yogurt for the flavour) in the mixing bowl. Thoroughly mix the ingredients together.

Sift in 75g low gluten flour, and 15g of corn starch into the mixture and thoroughly incorporate it until a consistently smooth batter is achieved.

Combine 3 egg whites, 30g of sugar, and a tablespoon of lemon juice in a fresh bowl. Use a whisk to whip the mixture until it reaches the desired consistency. Stop whisking once it appears ready.

Combine the ingredients in both bowls and thoroughly blend them together.

To bake the cake, pour the ingredients into the baking mold and utilize the water bath technique. Bake at a temperature of 145 °C degrees for a duration of 55 minutes.
